Handling Tips:
- Keep frozen. Defrost in the refrigerator before cooking.

- Once defrosted, unpack and pat dry with a kitchen towel.
- Let the meat come to room temperature before cooking.
- Brush lightly with olive oil just before placing on the grill or pan.
- Preheat the grill/pan until very hot.

- Once cooked, let the meat rest for a few minutes before cutting to lock in the juices.
