This Rougié frozen magret duck breast is a premium, well-marbled cut with a rich and tender texture. Sourced from the South-West of France, it comes from Moulard ducks raised free-range specifically for foie gras production — a process that gives the magret its distinctive richness, generous fat layer and depth of flavour that sets it apart from standard duck breast. The meat is deeply flavourful with a velvety mouthfeel, while the layer of fat crisps up beautifully when cooked.

Easier to cook than its reputation suggests — just score the fat, start it skin side down in a cold pan, and finish in the oven or flip and cook briefly on the meat side. Best served medium-rare with a pink, juicy centre.
