Blue Cheese Cow & Goat Milk Wedge (100g)

It is a blue cheese, made all year round with cows milk and goat. Long ripening, until reaching the point between "semicurado" and "curado".
It presents a rough and irregular rind, of dark gray tones and with small red and blue spots. The paste has a soft texture and pale yellow color, full of small cavities where a white and greenish-blue mold is concentrated.
