Beef tongue from grass-fed Black Angus cattle — a well-loved cut across Asian and Latin American cuisines, and for good reason. Clean, rich in flavour and beautifully tender when slow-cooked, it's a well-balanced cut that's neither too lean nor too fatty. This one is Halal Certified and comes from Uruguay, where Black Angus cattle are raised on open pasture — the quality shows in the flavour.
Braise low and slow in the classic style, slice thinly and serve warm with chimichurri, or use in the Japanese gyutan preparations many HK diners will already know and love. However you cook it, the result is the same — deeply flavourful, remarkably tender, and satisfying in a way few cuts can match.

- Black Angus, Halal certified
- Grass-fed, grain finished
- Wet aged and vacuum sealed at origin
- Thaw slowly in the fridge for 24–48 hours before cooking
- Simmer in salted water with aromatics (onion, bay leaf, peppercorns) for 2.5–3 hours until tender
- Peel the outer skin while still warm — it comes off easily after cooking
- Slice thinly and serve warm with chimichurri, soy-based sauce, or salsa verde
- Can be finished on the grill or in a pan after braising for a crispy exterior
- Works beautifully in Japanese-style gyutan preparations or braised in soy and mirin
- Pairs well with a bold red — Malbec is a natural match
