How to cook / tips
- Thaw ribeye slowly in the fridge overnight before cooking
- Remove from fridge 30–45 minutes before cooking to bring to room temperature
- Cut into steaks of roast whole
- Pat dry and season generously with coarse salt — this cut needs little else
- Sear first, then finish in the oven at 180°C or continue on the grill
- Best served medium-rare — rest for at least 10 minutes before carving
- Serve the Malbec at room temperature — open 30 minutes before serving to let it breathe
