Our outside skirt (entraña fina) is a long, thin cut from the diaphragm, loved for its natural marbling, rich, beefy flavor and distinctive loose grain. Perfect for quick grilling, searing, fajitas, or tacos. Always slice against the grain to ensure tenderness. May come with a natural outer membrane, which you can remove for extra tenderness—or keep it on for added flavor and grill until crispy.
Compared to inside skirt, outside skirt (also known as thin skirt) has richer marbling and is more tender.
