This is chistorra done properly. Bright red, slender, and intensely flavourful, Olmeda chistorra is a traditional Spanish sausage known for its tender texture and deep paprika character. Made in small batches in Arbizu, Navarra, it’s a product of place, craft, and restraint — nothing added, nothing unnecessary.
Chistorra is softer and flatter than most sausages, designed to cook quickly and release its flavour easily. When cooked, it becomes beautifully juicy, with a rich porkiness balanced by sweet paprika and a long, savoury finish that lingers.
Perfect for:
- Cutting, pan‑frying and serving simply over crusty bread
- Adding it to stews or lentil soup
- Pairing with potatoes
- Cooking over fire — chistorra and a hot grill are a natural match
The chistorra by Olmeda is made artisanally in Arbizu, north-west of Navarra, in a village surrounded by forests, peaks and rivers. They are made with minced meat, pork fats, salt and paprika; without preservatives or additives. Afterwards, it is left to air for three days in our drying cellars.
